Hi all,

 

My name is Shani. I am happily married and have 2 children. We were told

not long ago that our son (age 9) is a little overweight. So, we are trying

to have a more healthy diet so that he can. We will all be eating the same

foods so that he doesn't hate the idea. We don't want him to have a complex

over this. His sister age 13 is just a picky eater (this is her only

problem). My husband, Bill, was raised on meat and potatoes, but I am trying

to change that just a little.

 

We live on an island off of the coast of North Carolina. As a family we have

decided to try a vegetarian diet to see if that will help us all to feel

better.

I've found lovely recipes on this list, but haven't posted many. I'll do

better, promise!

 

My newest fave meal:

 

Couscous with kidney beans

 

Using quick couscous, boil 1 1/2 cups water, add to couscous with 1 tbsp oil

and dash of salt. Cover for three minutes.

 

Add 8 oz (half a 15 oz can) of kidney beans, garlic pdr and salt and pepper

and basil to taste. Also, more olive oil, if desired. Also good with canned

garbanzo beans (chickpeas).

 

There, not really a recipe, but something. LOL! :)

 

Oh, leftover couscous is great. It's good cold or hot, it heats well in the

microwave.

hi, everyone. I just joined the group tonight - I'm looking for quick

meals (because I hate to cook) that I can take to work for my lunches and

freeze ahead of time - am I asking too much?

 

I've been vegetarian for 20 years because I do not believe we should be

raising animals and killing them - or hunting or fishing them - to survive.

I eat dairy products, eggs, etc., that do not require loss of life to put

on my table.

 

here is my recipe for vegetarian chili:

 

1 medium sized eggplant, peeled & cut into small cubes

2 medium onions

1 large can corn niblets

1 large can tomatoes

1 large can kidney beans

couple stalks of celery

margarine or butter or veg. oil

packet of chili mix (well, I use 2 <g>)

 

saute the eggplant and onion and celery in oil or butter. Add the corn,

tomatoes, kidney beans and seasoning and simmer till the eggplant is tender.

 

This freezes really well. When I'm doing my lunches, I put 1 1/2 cups in a

container and some mashed potatoes on top and freeze it. When I microwave

it at the office, its rather like a spicy shepherd's pie.

Hi, I'm Lisa from New Jersey. This summer, our family has a share in an organic

farm and it seems

each week we are overloaded with a different vegetable. Boy am I sorry we

didn't buy another

freezer. Guess we'll have to put that on our wishlist. My biggest problem is

finding recipes

that don't require me to buy another vegetable. I've spent hours been searching

my recipe link

recipes, but with

three kids and one on the way, I can always use more quick and simple recipes.

I am Stormy, and I live in CA....I am particularly looking for quick and easy

meals...I am a lazy cook....but trying not too eat too many carbs.....Anyway,

Hi Stormy. Lots of good ideas from many ppl on this list.

 

When I'm tired, I often just open a can of beans, throw some olive oil and

garlic and basil in , and toss with pasta, couscous, etc. If you're avoiding

carbs, you probably skip that last part. :)

 

My 1, almost 2 yr old likes toasted tortillas and mushed beans. Also one of

my easy faves.

Hello,

 

I have been a vegetarian for a number of years, but I don't often

have

time or energy to cook elaborate meals (except at holidays). It's

difficult to find quick, easy meals to feed my family (including two

fussy kids). There seem to be very few vegetarian main course

recipes

around that are fast and use few ingredients (which is the most

important thing for me). That's what I'm hoping to find here!

Hi Titi, my husband is an animal eater... I just don't

cook his meat for him, he does it!

:)

 

Also, I make a lot of veggie casseroles and things

that satisfy me and he is able to have a side of

" meat " ...

 

Summer is coming and makes it easier for the " men " to

grill...

 

 

I have loads of things let me know if you need them!

Hello Titi and Welcome to the group.

My boyfriend and my daughter are both meateaters. Many nights I cook strictly

vegatarian meals. On the other nights I cook meat for them and a veggie pattie

for myself. The only compliants I get are from my 6 yr old,it doesn't matter what

I cook! LOL

My dh (a meateater who loves butter on his steak -- yuck! -- but has never had a cholesterol level over 200, lucky!) loves spaghetti -- I use lentils and process them, so he doesn't "notice" it's beans instead of meat. As long as it's thick, he likes it. If it looks and tastes like meat, he'll eat it. Although because ds is allergic to corn products, I can't use any of the veggie burgers -- I have to make everything from scratch.

 

DH, too, will grill a lot (we bought a JennAir range so he can grill in winter).

I became a vegetarian about 14 years ago while dating my current husband.

When we got married and he moved in with me I would not allow meat in my

house (if it was his house, I wouldn't be able to ask that). He didn't

think it was a problem but would eat it outside the house. Luckily we went

to Farm Sanctuary in NY for our 1 year anniversary where he became a

vegetarian. We have been married 12 years. I could not imagine having meat

in my house. Good luck.

hi there :) i'mmarried to a meat eater, and basically, if i cook, i welcome him to share in whatever i make, but if he doesn't want it, he cooks for himself. period. it's worked out really well actually, we just fend for ourselves in the kitchen, though he loves me to make boca burgers, tvp tacos, or steamed asparagus with vegan aioli :)

Hi Bethany,

 

I am Kim and I am enjoying the list. I have been a vegetarian for over 10 years. I have a carnivorous husband who only eats meat when he is out or cooking for himself and a one year old son. With the baby, I am especially interested in easy to prepare and inexpensive recipes.

Just a quick hello to say " Hi! " and introduce

myself. I'm 42, married 19 years, and due to the problems with meat in

recent years I've become too afraid to even eat it. I've begun a

macrobiotic lifestyle that is agreeing with me well beyond my

expectations. Even if all problems with meat & dairy were to be

resolved I would never eat it again. My eyes have been opened and I will

never allow them to be closed again.

I have also given up junk-food, sugar, white flour, and canned/frozen

foods. I'm learning to eat whole foods without dyes, artificial

flavor/color/sweeteners, preservatives, etc... I feel better than I ever

have in my life, and another upside is that I'm losing weight.

:)

My husband is still a meat-eater & junk-food junkie, but I hope in

time to ease him into a healthier lifestyle by my example. I look forward

to finding new recipes to compliment my new lifestyle, and to share what

little I have. :)

Hi Mel,

I am also attempting weight loss, unfortunately I have

too much of an apetite. Are there any vegetarian

weight loss suport groups out there?

Ediets.com has worked well for me, you can customize the diet to vegetarian, vegan or any combination.

Thanks for the welcome... My family and I have wanted to give up meat

for years, but never knew just where to start... Recently, my son's

doctor suggested we give up red meat to help with my son's

reoccurring stomach troubles... I guess we just figured why not give

it all up, and finally give vegetarianism a try... It's only been a

few weeks, but we're all doing really well and hope to continue on...

I was really glad to find a list like this and look forward to

getting to know everyone...
