I'm Bob from Malvern in the UK and I've just d to your group.

Wow the recipes are great. Being a lone vegie in a house of carnivores can lead me to neglect my diet but now I'll have plenty of inspiration to cook for myself ...Thanks

ps. Has anyone got a conversion table they can forward to me as your measurements are different to ours.Thanks in anticipation.

Hello everyone!

I am a mom of six, and a recent member. I do eat fish however. What I need

are REALLY quick and easy recipes. I look at Veg. Times magazine and I see

that ALOT of them require lots of prep. and lots of time in the kitchen.

Any suggestions would be great! Thanks, and I am happy to be here! :)

Welcome Colleen! I get Veg. Times too, but find that even though it has lots of recipes many will not fit into my young families tastes. One recipe that I will pass along to you, if you eat eggs... Make a filling of canned diced tomatoes, lots of celery, onion and green pepper, salt and pepper to taste. Cook until tender. Make omelets and fill with veggie mix.

We eat this morning, noon, and night and even while camping. It's quick and tasty anytime. I make another quick recipe using Ro-Tel Festival Tomatoes with Cilantro and Lime. I place a tortilla in a pan with some nonstick spray put in beans, some sauce and some cheese. flip over to make like an omelet and brown lightly on both sides.

My kids like to make cream cheese and olive sandwiches. I use softened cream cheese and diced up green olives with a tiny amount of juice mix, well and serve on whole wheat. You can also add a bit of mayo if you like. This all depends on if you eat dairy of course. I also use the above cream cheese mixture to stuff celery with.
