The frying gets rid of the sliminess. You can also mix other veggies in as you saute: different squash, onions, mushrooms, zucchini, mushrooms all come to mind. I guess you could also toss in some tofu if the spirit so moves you! :0) Fresh okra straight from a neighbor's garden was the first okra that I had ever eaten that I actually thought tasted good. She was the one who suggested sauteing in a skillet; before that, I had always boiled it. It also helps to just use fresh or frozen as the canned stuff is what I consider to be slimy. Whole okra - as opposed to sliced - also seems to make a difference. Hot pickled okra is tasty, too! Tell us if you try these ideas and learn to like it!
