Guest guest Posted July 25, 2000 Report Share Posted July 25, 2000 For late night or quick,high protein snacks: Cooked chickpeas, spiced (chili powder, and/or cumin and/or pepper...) and eaten straight Chocolate soy pudding (1 pkt silken tofu, ca. 1/2 cup cocoa powder, 1/2 c honey... blend everything in a food processor or hand blender) soy nuts veggies with tofu dip, or chickpea dip, or lentil dip (you can buy these premade, but I generally make it. Mix together with a food processor or hand masher lentils (or chickpeas or tofu) with a bit of sesame paste or (soy) mayonnaise, add some garlic, herbs and spices. This will drain the excess water out of it so it won't be wet and drippy when you prepare it. Hope that helps your wet and drippy situation.. I have found that if I freeze extra firm tofu, then thaw in the refrigerator, the texture changes a bit and I like it much better. I always wrap it in dish towels and press before cooking. We make TLTs. A little Nayo, toasted whole grain bread, tomatoes, lettuce and tofu sliced and grilled with a little soy sauce, salt and pepper, and fresh herbs. mmmmmm. It is so fast. Alternatively, I use the same spices and grilling technique (or a little sesame oil) with diced tofu and add it to a salad with fresh greens, mandarin oranges and noodles. Guest guest Posted August 7, 2000 Report Share Posted August 7, 2000 I once came across a recipe for that, and for one pound of sliced extra firm tofu, it was one teaspoon of liquid smoke and a couple tablespoons of soy sauce. But it can vary according to the brand of liquid smoke you use. I'd start with a teaspoon and then add some more if the flavor is not strong enough for you. You fry the tofu in a pan until it gets nice and crispy and then you can add some nutritional yeast. Yummy!
