Guest guest Posted August 16, 2000 Report Share Posted August 16, 2000 Dr. Andrew Weil's Raw " Law " The following is from the book, 'Natural Health, Natural Medicine' by Andrew Weil, M.D.: (revised edition, Houghton Mifflin, 1995) " Never eat raw: peas, beans, alfalfa sprouts, lentil sprouts, mung bean sprouts, mushrooms. Best when cooked a long time: beans, lentils, chickpeas, eggplant. Better cooked than raw: beets and beet greens, chard, spinach, cabbage, broccoli, cauliflower, kale, brussel sprouts, collards, mustard greens, winter squash, green beans. Do not overcook green vegetables. Good both raw and cooked: carrots, celery, onions, garlic, chives, scallions, summer squash, turnips, endive, asparagus, sunflower sprouts, tomatoes, peppers. Better raw: lettuce, other salad greens (arugula, radicchio, watercress), cucumbers, radishes, buckwheat sprouts. " The reason why it is not healthful to eat certain vegetables raw is that they contain natural toxins which are destroyed by cooking.
