I have no idea how to go about making soups that do not use some kind of meat, poultry or seafood stock. I do like tomatoes, but too many make me break out, so light on the tomatoes would be good. Any ideas? Also, any ideas what I can do with this old jar of wheat germ in my frig.? Do you usually just shake it on top of food for flavoring or can it be used as a main ingredient? Thanks! I've been a vegetarian since I was 15 (I'm now 30). I do still eat dairy, though not much. I live in Washington DC. You can make great vegetable broth too! Just use your favorite veggies. Onions, garlic give great flavor. I also like carrots, celery, mushrooms and herbs. Boil them in a pot of spring water, then drain & squeeze out juices into another pot. Here you can add all your favorite veggies like corn, beans, etc. The only thing I would advise is not to use broccoli or other dark greens in the broth. It can tend to get bitter. I have added cabbage to the final soup and that turned out good. If you're really not feeling up to all the work, they also make canned vegetable broth-just look for low sodium, all natural varieties. Hope you feel better! It is canned and I get it from the supermarket or health food store. They also make minestrone and lentil. All these soups are vegan and yummy!
