instead of lunch meat

My husband surprised me yesterday by saying that he would be willing to try

to go totally meatless, except what was he going to bring in for lunch at

work! He always brown-paper bags one or two cold-cut sandwiches.

Personally, I always hated lunch meat, even if fresh from the deli. I am

forever eating soup & pasta for lunch in little microwave bowls. My husband

however, doesn't have any time to microwave on his job though and we are on a

budget which is why he likes cold-cuts. Anyone have any ideas besides just

cheese sandwiches? Is the alternative cold veggie sandwiches?

Hi. If your husband really likes meat, they have soy based meat products

which would be great in a sandwich. Morningstar Farms makes chicken patties,

there are countless brands of veggie burgers, and there are also soy lunch

" meats " . Some of them are very similar to real lunch meats. If your regular

supermarket doen't carry these things (Safeway, Giant here in DC carry at

least some of them), you can try healthfood stores/markets. Good luck! I

wish I could convince my husband to eat vegetarian.

hi chris!!!! :) there is a brand called Yves that can be found in any grocery store (at least in Washington State) that makes fantastic fake deli meat, and the brand Tofurkey also makes deli slices that are fantastic!!!!

Oven roasted vegetables with olive oil and balsamic vinegar. Cut

up red / green peppers, zucchini, yellow squash, onions, tomatoes, garlic,

eggplant. sprinkle with olive oil. Cook in the oven for about

40 minutes to an hour. Slice up a baguette and put balsamic

vinegar on the bread and some sliced up mozerella cheese. I like

the fresh, but packaged works. Then put the vegetables on it. You

can also put pesto, hummus or veggie mayo or mustard on the sandwich.

I know in New York City a small sandwich like that would sell for at least

$5. It is sooo Good! You could try different cheeses and add

on some veggie slices.
