hummus/tahini

So, is hummus the same as Tahini or is Tahini used to make hummus?

 

Also, how long does hummus keep in the fridge after opening. I am nuts about

freshness and always throw it away if it isn't finished a few days later.

tahini (mushed up sesame seeds) is used to make hummus (mushed up chickpeas and

garlic). I think the tahini holds the hummus together, I'm not quite sure. But I

think the hummus will keep for a week or so if unopened in the fridge. The two

have quite different tastes, try them and see! Personally, I prefer tahini as a

sauce on somthing else, such as a falafel. ;)

I'm new to this list but hope it is ok for me to just jump in.

 

My favorite hummus recipe;

One 15 ½ oz. can S & W brand garbanzo beans, drained

3 Tbsp. Joyva brand tahini

3 Tbsp. fresh lemon juice

2-3 gloves garlic, peeled and pressed before adding

salt to taste

In the bowl of a food processor combine all the ingredients and

process until smooth. Refrigerate.

 

People differ in taste, some like lots of garlic, others a little.

Some folks like to add a dash of cayenne.

In my experience the brands of garbanzo beans and of tahini matter.

hummus is a middle eastern dish based on tahini and chickpeas mashed

together, you can add anything else along with it, most add lemon juice,

paprika, and olive oil.

tahini is a paste made of sesame seeds. when i make hummus and i am in a

pinch (argh! out of tahini!), i use peanut butter.

it is Pam, sorry if I wasn't entirely understandable. tahini is IN hummus.

hummus is mushed up chickpeas with garlic and anything else you want to

throw in. sorry I didn't make sense.... (university midterm season! aaahhhh!

brain is fried!!!!) ;)

It is made with chick peas. Tahini is used as a flavoring more than

anything else. Between us, I far prefer hummus made without tahini. Fresh

garlic, lemon juice, paprika and cayenne add plenty of flavor, and a good,

rich extra-virgin olive oil adds a lovely texture (and even more flavor).

To me, if you add even an iota of too much tahini it makes the hummus nearly

inedible.

I often make it without any tahini. The quickest way is to throw cooked chickpeas in the blender and add Italian salad dressing!
