hi Chelle! there is chicken style Seitan, which is really tasty!!! :) plus, dixie diner (www.dixiediner.com ) also sells chickenNot! in several different styles.... i don't know if the seitan would work in soup or not but in any other dish i'm sure it would be fine. also, if you aren't vegan there is a product called Veat which is really good ( www.veat.com ) and very chicken like....this also can't be used in soups....

 

your soup idea sounds good though, i'd love to hear if anyone has (vegan) ideas for this!!!!!!

Hi,

I have used veat products in soup and love it, but I add it at the last moment--just before serving. I use a vegetarian chicken broth mix to achieve the chicken flavor in the soup.

I have used chunk-style tvp for chicken and have had some meat-eaters

shocked that it wasn't chicken. I used it in a shepherd's pie.

I reconstituted the tvp in no-chicken broth and added a

powdered 'chickeny' broth for extra seasoning. To put this in a stew

I would do the same thing, except I would cook it down since you

don't need the gravy.

From the Nutritional Yeast Cookbook

 

1 1/2 c nutritional yeast flakes

1 1/2 T salt

1 T onion granules

1 T ground celery seed

2 t garlic granules

1 t turmeric

1/2 t ground white pepper

 

Place all the ingredients in a food processor fitted with a metal

blade and process into a powder.

 

Store the seasoning mix in an airtight container at room

temperature. Shake the container well prior to using in order to

redistribute the ingredients.

 

Stir a bit of this into soups, casseroles, tofu, and dips to add

an 'eggy' or 'chickeny' flavor.
