It would make a great side salad or a main meal with some crusty bread during the warm summer months. ZESTY LENTIL SALAD 1 12-oz. package, dry lentils, rinsed 6 C water 2 cloves garlic, peeled 2 bay leaves 1 C thinly sliced green onions 1 small green chili, chopped 1/2 C extra virgin olive oil 2 Tbsp. red wine vinegar 1 tsp. grated lime peel 2 Tbsp. lime juice 4 large cloves garlic, minced 1 tsp. ground cumin Salt and pepper to taste 2 Tbsp. chopped parsley In a large saucepan, combine the lentils, water, the two whole garlic cloves and bay leaves. Bring to a boil. Cover, reduce heat and simmer until lentils are soft (about 30 minutes). When lentils are done, drain, discard garlic and bay leaves. Allow lentils to cool. Place the lentils into a large bowl and mix in onions and chili. In a mixing bowl, combine the olive oil, vinegar, lime peel, lime juice, minced garlic and cumin. Mix well with a whisk.
