chick pea challenge

Anyone have any really easy simple ideas on how to use up chick peas?

curries, stews..... something that no one has ever heard of... etc.....

I've got a craving for them, but the only way I know how to use them is

either raw on a salad or as hummus. I've also got limited ingredients

here, so really really simple would be a plus! ;o)

I've been lurking for a couple of months now. Just went vegetarian myself,

although DD has been one for 5 years now, and haven't posted because I

didn't have any recipes to contribute. But you jogged my memory about this

one I got from my in-laws in Pakistan years ago. Hope you like it.

Ingredients:

2 15-oz cans chickpeas, drained

1 ½ tsp. cumin seed

1 tsp. chopped fresh ginger

2 chopped tomato (or use 1 can of diced tomatoes)

1 tsp. salt

1 tsp. ground cumin

1 tsp. lemon juice

2 tsp. vegetable oil

1-2 onions, chopped

1 tsp. garlic

½ tsp. garam masala

2 tsp. ground coriander

1 tsp. fresh coriander leaves, chopped

 

Heat oil in a saucepan. Add cumin seed and cook for 30 seconds. Add

ginger, garlic and onion. Fry until onion is golden. Add tomato, masala,

salt, ground coriander and ground cumin and cook until tomatoes are soft.

Add ½ c. water and chickpeas. Cook for as long as possible, adding water if

necessary. Add lemon and coriander leaves. Cook for additional 5 minutes.

Serve with rice.

Hi there,

 

I use chick peas everywhere - they're definitely my favourite!

For a quick curry I stir fry whatever I have, e.g. cubed potato, diced

eggplant, carrots, peas, beans, onion etc. Then toss in some chick peas. I

add some turmeric, ground coriander and cumin to taste (the more, the

spicier) and then a little coconut milk if I have any or have even used soy

milk to make the dish just a little wet and the spices go saucy.

They are also great added to soups, just stir through for a few minutes to

warm prior to serving.

I love making a quick tomato based stew with various diced vegies, chopped

tomatoes and add the chick peas at the end again til they are warm.

I have a good recipe for a chickpea salad...does that help?

Chickpea Salad

 

2 1/2 c. chickpeas (raw)

1 large onion, chopped

3/4 c. lemon juice

1/4 c. oil

2 T. parsley

1/4 tsp. garlic

1/4 tsp. cayenne

1 tsp. salt

 

Cook chickpeas. Mix in onion. Mix remaining ingredients well and pour

over chickpeas.

I saute garlic in some olive oil and then toss in a can a chick

peas. Let it cook until hot and slightly tender and then mix with

some cooked pasta. Flavor with salt and lots of pepper. This is so

quick and good too.
