Angel Hair Pasta with Tomatoes

 

Ready In: 25 minutes

 

Ingredients:

 

1 pound Angel Hair or Capellini pasta, uncooked

2 tablespoons vegetable oil

1 tablespoon minced garlic

5 cups tomatoes, diced

1/2 teaspoon basil

3/4 cup low-sodium chicken broth

5 tablespoons Parmesan cheese

Salt and freshly ground pepper, to taste

 

Directions:

 

1. Prepare pasta according to package directions; drain.

2. Heat oil in a large skillet over medium-high heat.

3. Add garlic and cook for one minute.

4. Add tomatoes, basil, salt and pepper. Cook for 3 minutes.

5. Add hot pasta to skillet; toss well.

6. Add chicken broth and stir.

7. Toss with Parmesan cheese and serve immediately.
