Guest guest Posted June 4, 2001 Report Share Posted June 4, 2001 Vegetable Stuffed Picnic Loaf Serves 6-8 Ingredients: 4 C. roma tomatoes, diced 2 C. onion, diced 1 1/2 C. green pepper, destemmed, deseeded, and diced 1 1/2 C. orange or yellow pepper, destemmed, deseeded, and diced 1/3 C. black olives, pitted and chopped 1/3 C. green pimiento stuffed olives, chopped 1/4 C. sour gherkins, diced 1/4 C. capers 1 large loaf French bread olive oil dried oregano paprika salt and pepper Method: 1. In a bowl, combine the tomatoes, onion, both peppers, both olives, gherkins, and capers, and toss gently. 2. Cut the loaf of French bread lengthwise with a serrated knife. From each half of the bread, remove some of the inside of the loaf, and cut into cubes. 3. Add the cubes of bread to the vegetable mixture and toss gently. Drizzle a little olive oil over the mixture, season to taste with the oregano, paprika, salt, and pepper, and toss well to combine. 4. Fill the inside of each half of the bread with the vegetable mixture and press the two halves back together to reform a loaf. 5. Wrap in plastic wrap and chill. This sandwich can be made a day ahead. Cut the loaf into slices before serving.
