Guest guest Posted June 5, 2001 Report Share Posted June 5, 2001 Okay, so this recipe isn't exactly quick-cooking, but it's pretty quick to prepare... 2 Cups Dry Pinto Beans 1 Quart Vegetable Broth 1 Large Potato, washed, and cut in to thin chunks 2 Carrots, Washed and sliced 1 Tablespoon Miso 1 TSP Molasses 4 or 5 medium-sized garlic cloves, minced 1 medium onion, diced 1 cup Short Grain brown Rice (optional) 1 14ish Ounce Can Diced Tomatoes (optional) Soy Sauce (I use Bragg's)(optional) Rinse Beans, Soak overnight, Rinse Again. In the morning, Put Rinsed Beans in Crockpot with Vegetable Broth, Potato, Carrots, Molasses, Miso, Garlic & Onion. Cook On low all day & All night, Or until tender, stirring occassionally. You can eat it as is, (Add Salt, if desired), or ... Optionals: If you decide to let your beans cook all day and night, in the morning they will be nice and tender. Add the Brown Rice, Tomatos & Soy Sauce, and let cook until Rice is done, Add more vegetable Broth if it starts to dry out too much. Notes: Just in case you didn't know... Don't add the tomatoes or Salt to the beans until After they are tender, as it will make them tough. This is relatively easy and Tasty.
