Guest guest Posted June 8, 2001 Report Share Posted June 8, 2001 BHARAT (ROSE PETAL BLEND) This intriguing blend of dried rusebuds, cinnamon, and black pepper is used to flavor Tunisian couscous, ground meats, and egg tagines, or the Tunisian crustless quiches. Make it as you need it, so it won’t lose it’s fragrance. Dried rosebuds (chouch ward in Tunisian) are available in natural food stores (usually in the herbal tea section) and in Middle Eastern markets. 2 tablespoons dried rosebuds (about 10 buds), stem and calyx removed ½ teaspoon freshly ground black pepper ¼ teaspoon ground cinnamon In a spice grinder or with a mortar and pestle, grind all the ingredients to a fine powder.
