Help! Veggie car lunch ideas?

I'll be going on a cross-country trip in the car, Michigan to

California, for about 3 weeks. Our plan is to eat breakfast and

dinner at restaurants, and have lunch in the car on the road. I've

been trying to come up with some healthy ideas for good lunches that

can be fixed in the car (moving car, that is). I can bring my old

standard PBJ, but I'd like to eat healthier most days and incorporate

some veggies, etc. So...does anyone have any ideas for some good

sandwiches I can make, or anything else? Doesn't have to be a

sandwich, just something that can keep in a cooler/car for a little

while and be healthy and reasonably easy to fix. I'm drawing a blank,

here.

How about burritos or one of my favorites is mushed up black beans on a

whole wheat pita. I make my husband sandwiches with the fake deli slices

but that's too much work. With these you just need cans and a can opener.

That's all I can think of at the moment.

Jen, we love celery with a filling (nut butters or other). You can make them ahead of time, and they are cool and crunchy. We also froze things ahead of time and put them in the cooler frozen (pasta salad, etc.). When they thawed, we'd eat them. Do you have a cooler? We just bought one that plugs into the cigarette lighter, so you don't need ice. We'll try it out on our vacation.

I do this for my breakfast on most mornings. But it may keep well for lunch.

I start this the night before and leave in refrigerator. It is something I

don't have to cook or deal with in the morning.

 

For 2 servings of oatmeal - 1 8 ou nonfat flavored yogurt, 1 cup old

fashioned oatmeal. Put the yogurt and oatmeal in plastic bowl that has a

lid. Fill the yogurt container 3/4 with water and add to bowl. Stir, cover

and put in cooler until lunch.

 

I add a banana and raisins before eating.

 

Also if you stop at a truck stop you may find, like I did, a lot of kitchen

gadgets that can be plugged into your cigarette lighter. I stopped at the

Pilot Truck stop in Palm Springs, CA and saw a great selection. Here in

Hi Jen & all. Some of the items I include in the cooler for road trips are:

Hummus- great on bagels, rolled up in tortillas or even on a slice of

bread, also can use as a dip for veggies or tortilla chips

Yogurt-just make sure it doesn't have gelatin, add granola for crunch

Veggie lunch " meat " or veggie burger sandwiches

Fruit - oranges, apples, container of fruit salad, blueberries, grapes

crackers or tortilla chips (with salsa)

cheese

Cream cheese & bagels (add tomato slices or sprouts to spruce it up)

containers of pasta salad

 

Enjoy your trip!

You can keep all different kinds of hummus in a cooler and eat it

with crackers, carrots, celery, pitas.

Have fun on your trip.

What is HUMMUS? We are moving across country at the end of this week,

of which I'm overly delighted, HOWEVER, My Dr. has suggested a

Vegerarian diet for (me) and it would be so much easier if I could

introduce some fun things into my sweet husbands diet as well to make

food prep. a little more easy for us. ALSO this is " VERY NEW " for me,

so I'm more then likely going to ask several questions along the way.

Our computer is being turned off on Wed. and being packed for our

trip, so it will prouble be 2 weeks before I can get back on line

again, but any travel tips and recipes we can take along with us

and us would be greatly appreacheted. TIA JEanarie

Hi :)

 

We are also new! I'm starting our first vegetarian week this Monday to be

exact. I used www.fatfree.com to find a week's worth of recipes and we went

shopping today. The only things my regular store seemed to not have (or have

hidden!) were bulgar wheat and nutritional yeast. If anyone is interested I

can post the recipes as we try them, although I can't promise they are all

quick! I am making the roasted vegetable stock right now that is in Ornish's

book. You roast carrots, celery, leeks (first time buying & using those), 2

kinds of onions (red & yellow.. tho I threw in a vidalia too), and 2 bay

leaves. Roast at 450 for an hour, cover with 2 quarts of water and boil then

simmer and it keeps for about a week. The veg stock is used to 'fry' a few

of the ingredients in the recipes I'm doing this week.

 

Tomorrow we are having potato gnocchi (fatfree.com recipe), sauce, and sweet

vanilla polenta (also a fatfree.com recipe) for dessert. Tuesday I'm making

asparagus risotto and potato balls from the website.

 

My doctor highly recommend Ornish as a way to 1. lose weight and 2. deal

with low energy levels. I can't wait to try some of our new recipes. We are

giving this a 3 mos trial :)

Hummus simply wonderful, and in so many flavors...

It's like a dip... you can add it to crackers and pita bread... it is so yummy.

I hace even made my own.. I am sure you will enjoy it!

Houmous is a mixture made from chickpeas and tahini

(sesame paste) mixed until spreadable, very versitle

can be used as a main staple, for sandwiches or as a

dip... personally I love it.

LOL! Well.. we ended up having cereal with polenta for dessert. My gnocchi

turned into mush in the pot. Hmm.. I think we didn't knead it long enough so

we will try it again! This wasn't a very good start to our 3 mos vegetarian

trial hehehe Tomorrow should be better!!

 

(although the kids were thrilled by cereal for dinner and DH found the whole

thing hilarious ;)

Hopefully this will be encouragement for you. I have been the only vegetarian in my family for eight years and it is tough to start out because you don't know what to make or how to make it. And the worst part is when you meals go flop in the pot, i once made a potato soup that was so runny it was more like potato broth, but the beauty of vegetarianism is that it doesn't have to be hard. When things don't go the way you planned have a back-up mean ready like pasta with a hearty spaghetti sauce or pesto. Maybe some hummus and veggie pita pockets. These safe alternatives can turn disasters into successes in no time. Hopefully that will help so that these three months don't seem like three years. Good luck!
