Guest guest Posted June 21, 2001 Report Share Posted June 21, 2001 Hummus Delight Sandwich Ingredients: 2 slices whole wheat bread 2 tbsp. hummus alfalfa sprouts vlasic sandwich stackers (garlic flavor) pickels 1/2 tsp. dijon musturd 1 large, ripe tomato Directions: You take 1 slice of whole wheat bread and spread 2 good size tablespoons of hummus on it. Then you add a generous amount of sprouts and a layer of fresh tomato slices. Top with two vlasic stacker slices and add 1/2 tsp. of dijon musturd to other slice of bread and put them together. Guest guest Posted June 21, 2001 Report Share Posted June 21, 2001 Cucumber Hummus Sandwich Ingredients: 2 slices bread dijon mustard leaf lettuce 1/2 cup hummus thinly sliced cucumber sliced tomato 1 teaspoon balsamic vinegar 1 teaspoon grated dairy free parmesan cheese Directions: Spread both slices of bread with dijon mustard. Place lettuce on one slice of bread. Spread the hummus on the lettuce. (This prevents the bread from getting soggy if you take the sandwich to work). Lay the cucumber slices on top of the hummus and the tomato slices on top of the cucumber. Drizzle the balsamic vinegar over the tomatoes. Sprinkle the parmesan cheese over all. Guest guest Posted June 21, 2001 Report Share Posted June 21, 2001 Best Ever Sandwich Ingredients: 1 bagel (any flavor) 3 tablespoons of Hummus sliced red or green pepper (or both) fresh spinach leaves sliced cucumber sesame seeds (optional) Directions: 1. slice bagel in half 2. slice vegetables on both sides of bagel 4. spread sesame seeds on hummus 5. place sliced vegetables on top of hummus 6. close the bagel and enjoy! Guest guest Posted June 21, 2001 Report Share Posted June 21, 2001 Surprising Carrot Sandwich Ingredients: 1/2 fresh grated carrot 2 slices whole wheat bread 1/2 sprig green onion chopped 1/2 sprig fresh cilantro chopped 1 slice tomato 1 piece romaine lettuce 1 tsp. sweet mustard (optional) 1 tbsp. hummus Directions: Serves: 1-2. Preparation time: 5 minutes. Spread the sweet mustard on one slice of the bread. Spead the hummus on the other slice. Guest guest Posted June 21, 2001 Report Share Posted June 21, 2001 Portabella Mushroom Burgers Ingredients: 1 cup chopped portabella mushrooms 24 crushed saltine crackers or 3/4 cup cooked rice 1 small onion chopped salt and pepper to taste egg substitute to equal one large egg Directions: Chop up the mushroom or put in food processor using the chopping blade until finely chopped. In a bowl: Combine the chopped mushroom, the crushed crackers or cooked rice, the chopped onion, egg substitute and salt and pepper to taste. Mix till combined. Heat about 1/4 inch of corn oil in a pan. Form the mushroom mixture into patties. Place in pan. Fry till lightly golden. Turn and fry other side the same. Serve on a bun with all your favorite trimmings or top with gravy and serve with mashed potatoes and your favorite vegetable. There is a decent sized list (though they list Chuck E Cheese, so I'm not too sure about some of the others!!) Someone also told me to try Honest to Goodness Burritos, which is a lunch cart with exclusively veg burritos- it's on the corner of 15th and K streets NW. Are you going for the 4th of July? We are!!
