Guest guest Posted July 5, 2001 Report Share Posted July 5, 2001 Hi Mary, My husband and I are the only ones in our household also, as our kids are grown, and on their own I have lots of recipes that are quick, cheap, easy, and tasty. I will share them here with you. What we usually do is make a bunch of each recipe, then using freezer containers, we put the leftovers into individual containers, freeze, and then we have lunches already for work, just grab out of the freezer and go. So, here are my own recipes: I hope you will finds something that appeals to you. Cheers, Leslie in Calgary, Alberta, Canada ________ Leslie's Veggie Bean Soup 8 cups of veggie or chicken stock 1 large can diced tomatoes 1 large can mixed beans 6 Tbsp barley 4-6 cups of chopped fresh veggies: brocolli, cauliflower, zuchinni, peppers, carrots, celery, and white or yellow onion. 3 cloves of garlic spice to your taste. (I use fresh ground pepper, and a new Mrs. Dash spice mix called " Sun-dried Tomato, Basil and Garlic " . Toss all together into one big soup pot, bring to a boil, and then cover and turn heat to simmer. Simmer for at least 40 minutes, till all veggies are soft. Then, I used my handmixer to chop up some of the larger veggie chunks, right in the soup pot. Simmer till ready to eat, and serve with a piece of wonderfully grainy whole grain bread! I also put some shredded chedder and mozza cheese out so we could top our bowls of soup with a bit of cheese and it was Yummy! __________ Leslie's Italian Quick Dish: 1 bag brown rice pasta 1 large can diced tomatoes (Scarpetta's is great!) 1 Tbsp. butter (yes, we use real butter) 2 tsp. Mrs Dash spice called Tomato, Basil, Garlic. shredded cheddar cheese. (We used already shredded Tex-Mex mix cheese). Boil the pasta till done, and then drain. Put back into the cooking pot, add the Tbsp. of butter and stir till melted. Add the can of diced tomatoes, and the Mrs. Dash spice. Heat till tomatoes are hot enough. Dish out into bowls and top each bowl with some shredded cheddar. It was ready inside of 25 minutes. _____________ Vegetarian Stuffed Acorn Squash 2 acorn squash, cut in half, seeds removed 1 small onion 4-6 small mushrooms chopped 3 cloves garlic chopped 2 tsp grapeseed oil 1 pkg TVP(like ground beef-textured vegetable protein) parsley and basil to taste several grindings of pepper to taste. 1 small can tomato sauce 1/2 cup cooked long grain brown and wild rice After seeding squash, place on plate in microwave, lay a piece of waxed paper on top, and cook on high for 10 minutes, or until soft and cooked. While squash is cooking, heat grapeseed oil in non-stick pan, and add garlic, onion and mushrooms. Add TVP and tomato sauce, stir and add spices and herbs. Simmer. Add cooked rice to mix and stir to coat with sauce. When squash is soft, remove from microwave, and scoop veggie mix from non-stick pan into each 1/2 squash. Place waxed paper back on top and heat in microwave for about 5 more minutes. Serve with salad. We had caesar salad cuz it's one of our favorites. *I cook a batch of rice and freeze in baggies so that all I have to do is grab one baggie out of the freezer to add to dishes such as this. __ FRESH TOMATO/ONION PASTA Combine in Bowl: About 5-6 C chopped ripe tomatoes (use vine-ripened or Roma!) About 1 C finely chopped sweet onion l/2 C chopped fresh basil , or 2 T dry basil l/3 C balsamic vinegar l/4 C oil - olive oil or grapeseed oil 1 - 2 teaspoons granulated sugar About 3 garlic cloves chopped (more if you love garlic) Salt & freshly ground pepper Let these ingredients sit on counter at room temperature for about an hour. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ We cook Rice Pasta so that there is no gluten in it. When pasta is cooked, toss with tomato mix, and top with grated Parmesan or mozzarella. _________ Leslie's Yummy Bean Soup 1 large can kidney beans 1 large can garbanzo beans 1 large can black beans or mixed beans 1 large can lentils Empty all into one big pot, add your own spices to taste, heat and serve. Ready in 20-25 minutes, and freezes well. Truly a yummy soup! (to make soup, just add your favorite beans, lentils, and for variation, add a can of diced tomatoes and heat. Varying the spicing and the combination of beans makes each batch of soup different. My husband and I do not have children because we have unexplained infertility. We've been trying for 2 years. I don't feed Maggie (our dog) scraps, so a lot of our food tends to go to waste. I do love the freezer conatiner idea! I'll certainly look into that! Guest guest Posted July 5, 2001 Report Share Posted July 5, 2001 When I was in your position I used to just freeze the other half of the meal so that I had a quick prepared meal on a busy day. Also, I still make extra so I can take the leftovers for lunch. The other thing is to just halve the recipe. I find it works best to write down the amounts on a piece of paper as it is easy to forget to halve all the ingredients. I once put half of everything in the recipe except for salt!! Eeeek! I don't have any skin kids (I have 4 furkids) & most recipes are 4-whatever servings & a lot of the time it's too much to even half the recipe. I end up cooking too much & it makes it to the trash because it rots in the frig. I don't want to eat the same thing for a week & some things just can't be frozen.
