I love his books! I'm going through his cookbook, Everyday Cooking, and trying all the ones that look good to me.

Here's what I prepared for breakfast this morning, from his cookbook.

Patato Pancakes with Applesauce

4 baking potatoes, boiled and mashed

Egg whites from 6 eggs

1/4 c. grated onion

2 Tbl. Chopped parsley

Pinch ground nutmeg

Salt and Pepper

1 c. applesauce, homemade, mixed with 1 tsp. cinnamon or thyme

Mix potatoes, egg whites, onion, parsley, nutmeg, salt and pepper. Form into patties. Spray large nonstick skillet with cooking spray. Over medium heat, cook patties approx. 4 min. on each side, until browned.

Serve with applesauce.

I just got finished re-installing my scanner and OCR trial reader; so far it

is working [for now] pretty well and I only had to do a slight re-edit.

Here's the recipe I scanned and its revisions (below)
