hey,

thanks to everyone who sent me info about vegan recipe sites.now i have

another request.does anyone have a quick and easy taco recipe(vegan)my

husband just picked up some tacos but i realized i have no clue what to

do.(i just got married 3 weeks ago so i'm fairly new to this cooking

thing)

I usually just put refried beans, lettuce and shredded carrots in mine.

Sometimes we will cook up some ground TVP also. My husband adds salsa.

Congratulations on your recent marriage. I will be getting married in

January.

 

As for the tacos...

I use TVP (Textured Vegetable Protein) and taco seasoning mix along with

some red kidney beans.

(We had this yesterday in whole wheat flour tortillas) I also added cooked

brown rice to the mixture and stirred it all up.

 

TVP is soy flour that has been made into little pieces that takes the place

of meat like hamburger meat in most recipes.

You also might make tacos out of refried beans and lettuce, tomato, and

onion.

Lentil tacos

 

Ingredients:

 

1 1/2 cups dried lentils

3 1/2-5 cups water

1 bay leaf

1 stalk celery

1 clove garlic, crushed

1/2 tsp. salt

1/8 tsp. dried whole thyme

1 1/2 cups tomato sauce

1 Tbsp. taco seasoning mix

8 taco shells

1 1/2 cups shredded lettuce

1 medium onion, diced

1 large tomato, chopped

 

Directions:

 

Sort and wash lentils. Combine with water and next 5 ingredients in pot.

Bring to a boil, reduce heat, let simmer 1 1/2 hours. Stir occasionally and

add more water, if needed. When done, remove and discard bay leaf and celery.

Combine tomato sauce and taco seasoning in a small bowl; stir well.

 

Heat taco shells, spoon in lentil mixture, tomato sauce and other toppings

into shells. Enjoy!!

 

Serves: 4

 

Preparation time: 2 hours

Lo-Fat Veggie Tacos

 

Ingredients:

 

3 Tbsp. Olive Oil

3 Chopped Onions

Fresh Mushrooms (as many as you want)

1 Green Pepper

Fresh Broccoli Crowns (as many as you like)

1 Can Old ElPaso No Fat Refried Beans

Low Fat Taco Shells

 

Directions:

 

Saute onions, mushrooms, green pepper and broccoli in olive oil until

onions are translucent and veggies soft (approx. 15 mins.). Add refried

beans and continue to saute for an additional 15 mins. stirring

occasionally. When done, add to taco shells (salt and pepper to taste, add

a little garlic powder if desired) and dig in.

 

Serves: 3

 

Preparation time: 30mins.

Tasty Tofu Tacos

 

Ingredients:

 

1 c. mushrooms

1 c. zucchini

1 c. yellow squash

1 c. green & yellow peppers

1 block regular tofu, diced into small cubes

6 tortillas (depending on how much filling you want)

2 Tbsp. olive oil

garlic salt or taco seasoning

cilantro

 

Directions:

 

Heat the olive oil in a pan and stir fry the veggies until they are tender

(add or substitute if you don't have a taste for some of them). Add tofu

and let cook for a couple of minutes. Add taco seasoning or garlic to

flavor. Place all of this into warm tortillas and top with cilantro.

 

Serves: 6

 

Preparation time: 20min

thanks everyone for all your taco recipes.one thing though-a few of you

listed " taco seasoning " as part of your recipes.does anyone know how to

make that(for the " meat " )without using the prepackaged stuff?

Taco Seasoning

 

Ingredients:

 

Chili Powder

Cumin

Ground Red Pepper

Garlic powder

Onion powder

Salt

 

Directions:

 

This is for the person who wanted a recipe for taco seasoning. I wish I

could give exact measurements, but I cook more by taste and smell.

 

I usually start with about 1/4 C of Chili Powder and add 1 t. of cumin.

Then go from taste! This works really well I haven't used taco seasoning

for years.
