Since I haven't prepared zucchini in months, I don't know what to make with it. Can anyone suggest a few great recipes? Thanks! Guest guest Posted July 25, 2001 Report Share Posted July 25, 2001 I love to dice it (with or without peeling), steam it until crisp/tender, and serve with garlic butter. Saute it with onion, mushrooms, diced tomatoes, garlic and Italian seasoning for a nice veggie side dish. It's good raw in salads or with dip. Add it to most stir fry recipies or pasta sauces. Just be careful not to overcook it or it tends to get soggy, unless you like it very soft. Kris --- " KAREN M. Guest guest Posted July 25, 2001 Report Share Posted July 25, 2001 Zucchini Herb Casserole Ingredients: 1-1/2 lb. zucchini 2 Tbsp. oil 2 cup sliced green onions (tops included) 1 clove garlic, pressed 2 medium-sized tomatoes, chopped 1-1/4 tsp. garlic salt 1/2 tsp. basil 1/2 tsp. paprika 1/2 tsp. oregano 1 cup cooked rice Directions: Cut zucchini into cubes or grind it; makes about 5 cups. Heat oil; stir in zucchini, onions and garlic. Cover and cook 5-7 minutes or until vegetables are barely tender. Remove from heat; mix in tomatoes, garlic salt, basil, paprika, oregano, and rice. Guest guest Posted July 25, 2001 Report Share Posted July 25, 2001 Corny Zucchini Ingredients: 2 medium zucchini 2 cups finely crushed tortilla chips herbs and seasonings 1/2 lb. tofu 2 T. tamari 1/4 c. water olive oil for frying Directions: All ingredients are approximate. Blend tofu with tamari and water until smooth. Pour onto a plate. Cut zucchini into half-inch slices (lengthwise or crosswise). Mix any herbs or seasonings in with the crushed tortilla chips in a large bowl. Put some on a plate for easy breading. Spread tofu mixture thinly on either side of zucchini slices. Coat thoroughly with tortilla chip mixture and fry on both sides in olive oil on medium high heat until crispy on outside and tender on inside. This is a wonderful alternative to the eggs and bread in the " old-fashioned " breaded zucchini recipe. Great for egg-free and wheat-free diets, and tastes just as good! I've not tried these yet, but they are on my " to cook " list:) Grilled Zucchini Servings: 2 Prep. Time: 30 minutes Ingredients: · Parmesan Cheese · 1 medium Zucchini · Melted butter (real butter) · Salt and pepper Instructions: Slice zucchini in half lengthwise. Brush inside of zucchini with butter and sprinkle with salt and pepper. Grill face down for 15 minutes and then turn and grill on the other side for 15 minutes over medium heat. Grill until tender if 30 minutes is not enough. Remove from grill and sprinkle with parmesan cheese while hot before ZUCCHINI STUFFED WITH ITALIAN SAUSAGE SERVES 4 NOTE-->DON'T THROW STONES AT ME FOR THIS ONE..I KNOW THIS IS A VEGETARIAN LIST....BUT THERE IS MEATLESS SAUSAGE IN THE FROZEN FOOD SECTION OF THE GROVERY STORE:) That is what you use:) 4 medium sized zucchini 8 oz. Hot Italian Sausage, bulk meat 1/2 c. minced onion 3 Tbsp. minced parsley 1 Tbsp. minced basil 1 tsp. minced thyme 1/4 c. fine dry bread crumbs 1/4 c. grated parmesan cheese 1/4 tsp. salt 1/4 tsp. pepper 1 egg Cut the zucchini in half lengthwise and scoop out the pulp and seeds. Chop the pulp. Drain and squeeze as much moisture as possible from the pulp. Set aside. Heat a skillet and add the Italian Sausage meat. Cook and crumble it until it is cooked through. Drain off any fat. Add the onion, parsley, basil and thyme. Saute for 5 minutes. Remove from the heat and add the bread crumbs, 2 Tbsp. of the parmesan, egg and the salt and pepper. Mix well. Preheat the oven to 350. Fill the zucchini " boats " , and place in a greased baking dish. Sprinkle with the remaining parmesan cheese.
