When I bake, I make ALOT of cookies and freeze at least half for later use. The rest I put in a nice bowl on the dining table for snacking. Irish Style Oatmeal Cookies 3 c. uncooked irish style oatmeal 1 c. flour 1/2 tsp. nutmeg or cinnamon 1/2 tsp. baking soda 1/4 stp. salt (optional) 1 c. honey or maple syrup 3/4 c. softened margarine (I use soy margarine) 1/2 tsp. vanilla 2 egg whites or egg replacement 1/2 c. chopped nuts (optional) 1/2 c. raisins or chopped dates (otional) Heat oven to 375. Lightly coat cookie sheet with spray oil. Combine dry ingredients, mix well. Mix honey, margarine and vanilla until smooth. Add egg whites. Blend dry ingredients, mixing thoroughly. Stir in raisins, nuts. Place rounded spoonfuls of blended ingredients onto cookie sheet. Bake approx. 10 min. Cool. Makes 50 cookies (I doubled the recipe) Karla B.
