Does anyone have a suggestion for what I could use instead of the beer? I'm pregnant and therefore not drinking alcohol. Thanks!! TWO BEAN CHILI 1 1/2 tbsp vegetable oil 1 1/2 cups chopped onion 1/2 cup chopped green bell pepper 4 cloves garlic, minced 3 tbsp chili powder 1 tsp ground cinnamon 1/2 tsp ground cumin 1/2 tsp salt, or to taste 1/4 tsp cayenne 3 cups chopped tomato 1 cup beer 1 tbsp molasses 1/2 tsp oregano 1 1/2 cups cooked or canned, drained red kidney beans 1 1/2 cups cooked or canned, drained black beans In a 3 quart saucepan, heat the oil over medium-high heat. Add the onion, bell pepper, and garlic; cook, stirring, until softened, about 3 minutes. Stir in the chili powder, cinnamon, cumin, salt, and cayenne until absorbed. Add the tomatoes, beer, molasses, and oregano; bring to a boil. Stir in kidney beans; reduce heat and simmer, covered, 20 minutes. Uncover and simmer 20 minutes, stirring occasionally. Add the black beans and simmer 10-15 minutes more, stirring occasionally, until beans are soft and chili is thick. PS - As I look this over again I notice that it doesn't exactly look " quick " - sorry. However, it looks like it would make quite a bit, so you could maybe get 2 days worth out of it. It's a matter of principles I guess, and I don't want to give myself any reason to worry for the next 4 1/2 months until the baby's born. Not to mention the fact that I find the taste of beer revolting....I'm sure it wouldn't be noticable with the other ingredients but I'd rather not go to the work of cooking it if I'm not going to enjoy it. But I do appreciate the concern )) However, I'm sure you could use a cider instead. Try looking for a cider and maybe dilute it a bit. I have never drunk alcohol myself, so I'm not an expert on the topic, but I have seen what it does to those who partake tooo much! Guest guest Posted August 5, 2001 Report Share Posted August 5, 2001 Thanks for the replies, everyone! I suppose that it would be included just to have the flavor of the beer, not the alcohol. However, as I mentioned in an earlier post, I HATE the taste of beer so I'm a little worried that the recipe might have some of that flavor. That's why I was hoping to just use something else. My sister said that she often substitutes apple juice for wine, so I thought there might be a good easy beer substitute. I could definately use non-alcoholic beer, but I hate to buy a case of something that won't get used up anyway. I guess you might be able to buy it by the bottle.......I've never checked.
