We planted some this year (not quite sure why, hee hee) and other than just boiling them and putting a little butter on them, I'm not sure what to do with them all. Thanks. Are they worth making now and then? I'm relatively new at being a vegetarian, so I always focus on greens and I'm not as sure about what foods like beets do for you. I'm not a fan of beets, so I haven't tried the recipe which follows. Usage: Boiled, pickled or in salads. Can be added to soups, baked or fried. Beet tops can be used like spinach. Selection: Good quality beets will be relatively smooth, firm and small-sized. Bulk beets should be firm and not too dark-colored. Beets with the greens still attached assures the freshest product. Fresh beet greens should have bright green leaves with red veins running through them. Avoid: Avoid beets that are dark red to the point of almost being black or soft globes with rough pock-marked skin. Other signs to watch out for are leaves that are limp and wilted looking or dark green with spots of yellow or slime. Serving size 1 medium (100g) Calories 30 Total Fat .5g Sodium 150mg Total Carbohydrate 11g Dietary Fiber 2g Protein 1g % of U.S. RDA Vitamin A 0% Calcium 0% Vitamin C 4% Iron 0% Hot Borscht Ingredients: 2 bunches fresh beets with greens attached white or rice vinegar 3 onions, diced 1 cup finely diced cabbage salt pepper 1/4 cup chopped fresh dill 1 carrot, grated 1 parsnip, grated Directions: Peel Beets. (This may make your hands pink...wear gloves if that worries you) Dice raw beets, add to water, enough to cover and be about 4 times their volume. Lightly saute onions, carrot and parsnip in pan with cabbage and dill. Let sauteed vegetables sit while you cut up the carefully washed beet greens (they can get sandy, like spinach) into tiny bits. Add them at the last minute to the sauteed vegetables, stirring as they immediately wilt. Add vegetable mix to beets in water. Add salt and pepper to taste. The water should cover all the vegetables you have added. Cook over low heat for at least 2 hours til beets have gotten tender, the water has gotten VERY pink and all the veggies are cooked and very soft. Serve hot....folks may wish to add vinegar to the pot or to the individual servings. If adding to the pot, start out slowly...1/4 cup at a time to taste. When you like the taste, stop. They are sweet and usually served warm. Yummy!! Harvard Beets Ingredients 1 (16 ounce) can beets 1/2 cup white vinegar 3/4 cup white sugar 1 tablespoon cornstarch salt to taste Directions 1 Drain the beet liquid into a medium saucepan. To the liquid add vinegar, sugar, cornstarch and salt. Bring to a boil over medium-high heat. I don't have much veggie experience since the only way my mom did any veggies when we were kids was " boil em, slap on a little butter, and some salt & pepper " . It just depends on what you;d rather have You can put mayo (or vegan mayo ) on the sandwhich with cheese (or cheese substitute) with lettuce... it really is good.. then just use your imagination on what else you'd like to have on it... And you can get sweet & sour if you like that kind of thing but it's too sweet for me. They're good cooked with onions too.
