Guest guest Posted August 8, 2001 Report Share Posted August 8, 2001 Cucumber, Carrot and Celery Salad 2 1/2 celery sticks 1 carrot 1 cucumber 1 Tablespoon Chinese light soy sauce 2 teaspoons distilled white vinegar 1 teaspoon sesame oil 1/2 clove garlic, peeled, mashed to a pulp Cut celery into thin 2 1/2 inch long match sticks, peel carrot and cut into 1/16 inch diagonal slices. Cut the slices into match sticks. Peel cucumber and cut in half lengthwise. Scoop out the seeds and discard them. Cut the cucumber shells into match sticks. If you are not eating immediately, put veggies into plastic bag and refrigerate. Meanwhile, mix the soy sauce, the vinegar, sesame oil, and garlic. Just before eating, put the salad into a bowl, pour dressing over it, an mix. This looks as pretty and tastes really good.
