Guest guest Posted August 9, 2001 Report Share Posted August 9, 2001 Hummus Stuffed Cucumbers so refreshing!Ingredients: 2 CucumbersOne 15 oz can of chickpeas, rinsed1 tablespoon virgin olive oil1 tablespoon water 1/3 cup fresh lemon juice 1/3 cup tahini 2 Tabl chopped fresh parsley1 teaspoon salt ¼ diced black olives Instructions: Cut off the ends of the cucumbers.Cut each cucumber crosswise into 6 rounds and turn and turn the pieces so they lay flat.Use a melon baller or grapefruit spoon, gently scoop out some flesh from the top of each cucumber round. In food processor or blender, make the Hummus by combining the chickpeas, oil, water,tahini, parsley( reserve some for garnish), lemon juice and salt. Puree, adding more water if needed for creaminess. Stir in the black olives.
