Guest guest Posted August 12, 2001 Report Share Posted August 12, 2001 East Indian Meatballs Serves: 4-6 servings Measures Translation Table Ingredients: 1 package Gimme Lean!TM Beef 1 (20 ounce) can pineapple chunks 1/4 cup chopped onion, chopped 2 tablespoons butter or oil 1/2 teaspoon curry powder 1 tablespoon soy sauce 1 tablespoon cornstarch 1/4 cup sugar (or Florida Crystals or Sucanat) 1/3 cup white vinegar Instructions: 1. Drain pineapple chunks, reserving 1/2 cup syrup, set aside. 2. Combine Gimme Lean!TM Beef and onion. Shape mixture into small meatballs, inserting a pineapple chunk in the center of each. 3. Set any remaining pineapple chunks aside. Combine butter and curry powder in a non-stick pan. 4. Brown meatballs in butter mixture over medium heat. 5. Drain meatballs, combine drippings in a saucepan with the following: reserved pineapple syrup, curry drippings, vinegar, sugar, cornstarch, and soy sauce in sauce pan; stir well. 6. Add pineapple chunks; cook over medium heat, stirring constantly, until thickened and bubbly. 7. Pour over meatballs. Serve warm. Great over rice with steamed oriental vegetables. I use both the Gimmie Lean Brand of Beef and Sausage, and they are fantastic. I have had meat eaters that though it was real sausage!
