So what are everyone's easiest, easiest, eat when you're starving and exhausted meals? We, having lived on the Mexican border, eat Mexican tacos: corn or flour tortillas, folded in half over shredded cheese and mushed beans and/or instant mashed potatoes (cooked for 2 min in Micro), fried in oil on both sides. Guest guest Posted September 3, 2001 Report Share Posted September 3, 2001 I just saute some onion and garlic in olive oil, and then look in the frig to see what's going to go bad if I don't cook it soon! If I'm really tired, if it's not all that good, I won't notice, but usually I come up with things that really are good, that I wouldn't have thought of otherwise! LOL!! It also helps to belong to a community farm, because you get things you might not buy at the store and can experiment with them. Fall has arrived early, and I hope our garden gets to finish up. We put it in late. The produce from the co-op is dwindling a bit, except for squash. Just until I get some deeper pots ( & even the cheapo ones are quite expensive) I can't do much more than herbs, cacti, & pretty flowers at the moment. I'm proud to say though I'm finally getting some echinacea & chammomile to grow from seed.
