Guest guest Posted September 26, 2001 Report Share Posted September 26, 2001 Easiest Potato Soup Ingredients: 4 smallish potatoes, peeled 1/2 large onion 1 carrot, peeled 1 T oil salt and pepper (optional: veg. broth) Directions: Cut potatoes and carrot into 1-inch cubes, more than cover with water in a saucepan (some veg. broth is also good), and bring to a boil. Saute onion in oil until brown. When potatoes are soft, dump out most of the cooking water except for the last 2 inches, and dump in the onions. Set aside a few chunks of potatoes and some of the onions, then blend the big pot of potatoes and onions with a hand-held blender or mixer, or use a food processor or blender, being very careful not to splash! Add water, veg. broth, or soy milk as needed for desired soup-like consistency. Add the set-aside potatoes and the onions back to the big pot and stir. Add salt and pepper to taste. Yukon Gold Potatoes white or yellow onions celery with leaves minced garlic dill (to taste) salt "" pepper "" butter 1 to 2 tablespoons I peel and dice my potatoes adding them to ice water before they are cooked. I chop my onion and celery. I then put potatoes in a large pot, add water to cover them by about two to three inches. I boil the potatoes and then add my celery, onions, butter and dill. Add salt and pepper to taste. Cook on simmer until potatoes are tender. I mash a few to thicken broth. This is a quick and easy recipe and is a big hit on a cool Fall day. I serve it with some crusty butter bread. If you like a little zip I have added some hot sauce to my bowl at serving time or even have diced up some chili pepper for some added heat.
