I use leftovers as a snack with tortilla chips). I have a new website http://www.soyfoodkitchen.com I am trying to encourage readers to help me review soy products. I am working with several companies that make soy foods (so far I have Yves, Premier Harvest, Melissa's, Lumen Foods providing incentives). I am trying to get coupons and samples for anyone willing to try a product/recipe and provide a review. If anyone would like to help review, please consider signing up for my newsletter (it's free:) Every week I send out recipes, an article, new info and product reviews. I am also listing those products we would love to have reviewed and how to get the coupons/samples. Again, I hope this is not out of line but I would really love it if anyone is interested - I really want to build up our product reviews. I think this is an area that could help so many of us trying out different products and recipes and/or trying to convince our family to try new stuff! I saw your post for the Zesty Mexican Tacos in the archives and had a question for you. The recipe calls for soy crumbles. Can you explain what that is and where I would find it? I bought some " stuff " the other day called TVP (I think) and it is a dry vegetable protein. It looks sort of like bread crumbs I guess. Anyway, is that anything like the soy crumbles your recipe calls for? Or do you know how I would prepare this TVP or use it in recipes? Guest guest Posted October 5, 2001 Report Share Posted October 5, 2001 If you rehydrate the TVP in a " beef " flavored or " chicken " flavored hot broth, it tends to take on the flavor of the broth. ANd then you can use it in spaghetti, lasagna, or other things you would use ground beef etc in. There are different products that you can use, as well. Most come in a can. Guest guest Posted October 5, 2001 Report Share Posted October 5, 2001 Carol, Thanks for checking out the recipe! TVP is textured vegetable protein - it comes in several shapes and sizes. You can add it to stews, pasta sauces, rehydrate it and make it into meatballs - really lots of things. The soy crumbles that are in the recipe are different. They are made from soy protein isolate and natural ingredients. They are found in the refrigerated section of your grocery store - next to all the tofu, soy cheeses and other soy goodies. In my opinion, they are much, much better as a " stand alone " ingredient. TVP is good to add to a bunch of other stuff, while I like to use the soy crumbles to replace meat as a main ingredient. They have a variety of soy meat substitutes (or meat analogs) to replace sausage, ground meat, etc. In the recipe, I use Yves Veggie Ground Round (plain). It really, really has the taste and texture of meat once you cook it with everything else. It picks up the flavors of the dish quite well. The best thing is it does not leave the dish greasy like ground beef would. If you and your family are new to vegetarian cuisine, especially soy foods, I would suggest trying some of the more " meatlike " products. As I said, I love Yves. LiteLife also has some good products. About the only thing I do not care for is the deli slices, but I have not tried them all... I hope this helps and if you decide to try the recipe, please let me know what you think! PS -You might want to add the TVP to your favorite pasta sauce. You can use it in place of any ground meat you would add - add it about 20 minutes prior to serving so it can rehydrate in the sauce. It is purported to lower high cholesterol, reduce symptoms of menopause. Unfortunately, as with so many other things, soy beans are being genetically altered, as are so many other things we eat. My om works in a store that carries many vegetarian meat substitutes. One batch of soy corn dogs was recalled , as the company found out that the weiners had been made from genetically altered soy products. As more info is coming out about the horrible things tat are in dairy products, the more the dairy industry tries to make soy products look bad. I am sorry to say that money talks, and in this country the beef and dairy industries are VERY wealthy. Remember what happened to Oprah Winfrey when she made the statement, after talking to a meat inspector, that she would never eat another hamburger. The cattle industry sued her for milions. ALso there is another group I belong to that has a lot of info in their archives concerning soy, its benefitsand drawbacks, and how to make soy products, as well as hundreds of vegan recipes for those who want to be take the step beyond being vegetarians to becoming vegan. While I am very new at this, and welcome input. I feel that of the books I've read and the medical advice I've received I am going to be fine with Soy. We Use Soy milk in place of Dairy Milk, have not made the switch to Soy cheese yet. But that is coming. TVP (Textured Vegetable Protein) is our next look at alternatives to meat protein. Just my thoughts.
