Put them in the oven like a baked potato. When they are

soft to the touch and some juice is running out of the end

they are done (maybe 45 min?) Serve with butter, salt and

pepper. Yum :)

greetings, it is not quick but you can cook dem inna coconut milk with

several vegatables like a curry. a delight!

or in senegalese style with a sauce made with peanut butter, pepper, onions,

garlic and tomato.

You can microwave also, they take less time than regular potatoes. In

addition to the above recipe, I like to add a herb mix (I don't have a

brand, I buy it at the local mennonite store, but it's got sesame seeds in

it, which I think makes it!). I'll even mash them and add this mixture and

butter. Hubby and I love it! And don't forget sweet potato fries! IT's

wonderful either fried or baked (again, they don't take as long as regular

potatoes).
