When they are soft to the touch and some juice is running out of the end they are done (maybe 45 min?) Serve with butter, salt and pepper. Yum > Kris You can microwave also, they take less time than regular potatoes. In addition to the above recipe, I like to add a herb mix (I don't have a brand, I buy it at the local mennonite store, but it's got sesame seeds in it, which I think makes it!). I'll even mash them and add this mixture and butter. Hubby and I love it! And don't forget sweet potato fries!
