Mushroom substitutes ?

Hi all,

 

I was wondering if anyone had ideas for mushroom substitutes in recipes? I'm not talking about recipes liked Grilled Portobella of course, where mushrooms are a big part of the dish, but about recipes like pasta sauces, etc., where mushrooms are just one ingredient.

 

Mushrooms are the only vegetable I don't like! I have tried substituting celery -- it adds fiber but not much taste ... any other substitutions you would suggest?

You can just leave them out. Or, you could sub red pepper (or green, I just like red better). Whatever you add will have a taste of its own, just as mushrooms do, so add what you like.
