It must be different than the pumpkin filling. Shirley, I combined two recipes because I had extra. Pumpkin pie filling: 12 oz evaporated milk 2 eggs 15 oz pumpkin puree 2/3 cup sugar (or brown sugar) 1 tsp cinnamon 1/2 tsp salt 1/2 tsp ginger 1/4 tsp ground cloves 1/4 tsp allspice 1 tsp vanilla Custard pie filling: 4 eggs 2/3 cup sugar 1/2 tsp salt 1/4 tsp nutmeg 1 tsp vanilla 2 cups milk, scalded Each recipe is enough for one pie, total is two pies/casseroles. Mix them equally into a casserole or unbaked pastry shell. I only used a small amount in a small casserole and it set in 25 min. Bake at 350F/medium oven until an inserted knife comes out clean, probably about 50 min for a pie. HTH. Jo
Guest guest
Oops. Shirley and everyone, I mix the custard filling in a blender, adding the milk after the first pulse. I just hand mix the pumpkin. Jo
