Hello All,

I am Beth, been a veggi since '96. My husband is still carniverous,

so it is intresting in my kitchen.The worst thing is HE doesn't care

for vegetables,so I have become rather lazy in my kitchen and know I

do not always eat as healthy as I should. I am looking forward to

recipes that are simple,quick, and have smaller amounts of

ingredients.

I am not a vegetarian at this time. I am not going to make excuses or give

reasons for why I'm not a vegetarian (was a long time ago)... Just going to

ask for some tips and advice about becoming one while living with a family

full of carniverous.

 

I do try to eat vegetarian as much as possible. I even managed to get my

husband to eat at Zen Palate the other day.

 

My husband told me that if I could cook dishes that taste that way he would

eat more vegetarian dishes... <sigh>

 

I'm a good cook, but I have no idea how to make pecans taste like " chicken "

in sweet and sour delights.

 

So - anyone have any tips on:

 

making dishes that are vegetarian but will fool a meat eater.

what substitutions will work in the recipes I already have so my family can

have their comfort foods?

how to gradually wean people off of meat?

hey beth!

 

Here is a super easy recipe for you...just 6 ingredients!

 

 

EAsy Black Beans & Rice

 

1 can black beans (rinsed & drained)

1 can stewed tomatoes

1 diced onion

Taco or chili seasoning to taste

1 10oz package of brown rice

 

Cook rice. THen add to black beans, tomatoes, onion and seasoning.

Cook for about 30 minutes on stove. This is also a good mixture for

burritos!

 

Enjoy!

"JUST" animals, & you have the nerve to say that on a veggie list where

many of us have become veggies because we don't approve of slaughtering

animals. If you're not a veggie that's your decision, but to insult animal

beings is another. I won't say any more because this is not the list for

that debate, but I had to write something.

As long as animals aren't killed to provide the dish, it is okay

with

me. Although I, myself, am not interested in analogues, I

understand that

they make the transition much easier (especially for kids), and

also make

it much easier for hosts and hostesses (I know of vegetarians who

went back

to meat because they found that they weren't being invited to barbecues

vegetarian hot dogs or burgers would have kept them vegetarian).

I would say don't try to cook " meat-like " dishes, instead try to discover

new flavors, and re-discover the taste of veggies. there are really much

different flavors in veggies and herbs than in meat products. spices are a

must.

Am not strictly vegetarien Iself, but tend to adopt a most Ital possible

diet (rastafarian vegan diet). u will find tasty recipes on

www.earthcultureroots.com

a great inspiration is african and indian cooking

Hi, I wrote a letter to Robert Cohen recently. He is the author of " Not

Mlk " . I wanted info concerning a husband who wants to continue eating

" rare " beef. Mr. Cohens response was brief but amused me. HE said " Might

as well feed him hand grenades. "

If any of you are interested you can go to search and get some of his

articles. They may change your mind about lots of things. Rather than

share them, I think it better if you read them as you see fit. It amazes

me what the Government allows in the " food " we eat.

For me that is no issue, I don't mind trying new things at all, enjoy it!

However, my husband is a meat and potatoes person and although he will try

new things once in a while - if it doesn't look or smell normal - he wants

nothing to do with it <sigh>

I'm not even a veggie. I just want quick easy recipes. it's a shame you

are leaving because of others beliefs. Kinda lame. Especially when they

are just animals, many without higher consciousness.

Hi, I will repeat what I said the last time this arguement came up. I

have very strong thoughts on these issues too. But I don't think I am

important enough to attempt to force my opinions on others.

We agreed when we joined this group to respect the thoughts and ideas of

others. This is a cooking group to share recipes in, not our personal

thoughts as to why we choose to be here. I respect your right to

" think " as you choose. Please have the same courtesy for others.

I wasn't at all offended by your questions. I find it strange that anyone

could be upset by meat analogues. I always loathed burger and hot dogs, so

when Yves here began marketing veggie burger and hot dogs that tasted like

beef, I was not a customer. They make a wonderful pepperoni that my

meat-eater friends have adopted into their worlds. I have found somewhere

that makes a chicken-like product that I love, and because I enjoyed chicken

when I ate meat. Most of us come from meat-eating backgrounds. Some have

aversions to anything that tastes like meat, some miss it. I found a great

deal of peace in the EarthSave belief that ANY effort makes a difference.

It allows me to be more accepting of myself and others, coming out of the

meat-centred world.

 

OK, enough blabbing. Any more great recipes?
