My husband is still carniverous, so it is intresting in my kitchen.The worst thing is HE doesn't care for vegetables,so I have become rather lazy in my kitchen and know I do not always eat as healthy as I should. I am not going to make excuses or give reasons for why I'm not a vegetarian (was a long time ago)... Just going to ask for some tips and advice about becoming one while living with a family full of carniverous. I do try to eat vegetarian as much as possible. I even managed to get my husband to eat at Zen Palate the other day. My husband told me that if I could cook dishes that taste that way he would eat more vegetarian dishes... <sigh> I'm a good cook, but I have no idea how to make pecans taste like " chicken " in sweet and sour delights. So - anyone have any tips on: making dishes that are vegetarian but will fool a meat eater. what substitutions will work in the recipes I already have so my family can have their comfort foods? how to gradually wean people off of meat? EAsy Black Beans & Rice 1 can black beans (rinsed & drained) 1 can stewed tomatoes 1 diced onion Taco or chili seasoning to taste 1 10oz package of brown rice Cook rice. THen add to black beans, tomatoes, onion and seasoning. Cook for about 30 minutes on stove. This is also a good mixture for burritos! Enjoy! If you're not a veggie that's your decision, but to insult animal beings is another. I won't say any more because this is not the list for that debate, but I had to write something. I wanted info concerning a husband who wants to continue eating " rare " beef. Mr. Cohens response was brief but amused me. HE said " Might as well feed him hand grenades. " If any of you are interested you can go to search and get some of his articles. They may change your mind about lots of things. Rather than share them, I think it better if you read them as you see fit. It amazes me what the Government allows in the " food " we eat. Hope all had a wonderful Thanksgiving. Take care. However, my husband is a meat and potatoes person and although he will try new things once in a while - if it doesn't look or smell normal - he wants nothing to do with it <sigh> the web site looks really cool! But I don't think I am important enough to attempt to force my opinions on others. We agreed when we joined this group to respect the thoughts and ideas of others. I always loathed burger and hot dogs, so when Yves here began marketing veggie burger and hot dogs that tasted like beef, I was not a customer. They make a wonderful pepperoni that my meat-eater friends have adopted into their worlds. I have found somewhere that makes a chicken-like product that I love, and because I enjoyed chicken when I ate meat. Most of us come from meat-eating backgrounds. Some have aversions to anything that tastes like meat, some miss it. I found a great deal of peace in the EarthSave belief that ANY effort makes a difference. It allows me to be more accepting of myself and others, coming out of the meat-centred world. OK, enough blabbing. Any more great recipes?
