Fake bologna? Fake ground beef (TVP)? Fake sausage? I am not sure I have a FAVOURITE yet but I do think those veggie sloppy joe's at R. THOMAS (Atlanta) are incredible! I wonder if they'd share the recipe ... or at least tell me what type of TVP they're using ... ? I'd be particularly interested in hearing your experiences with tempeh and seitan. I've only used seitan once and it was 'okay' ... Anyone cook with tempeh? What's it best in? What should one NOT use it in? Cheers then. I love their spicy chicken patties, their regular chicken patties, their pizza burgers, and their hot dogs are good as well. Most of them are gluten based, some from mushroom, yams etc. Many can be bought dry and rehydrated (like with tvp) and others come canned with liquid (such as the mock duck which is really good). The seafood is really hard to tell the difference with the real thing, it even comes in the appropriate shape (prawns, scallops etc). There are also restaurants that specialise in cooking with the mock meat, and one that runs regular cooking classes. I have tried seitan and really enjoyed it. I HATE tempeh. You add liquid and eggs or replacer. I usually add some quick oats to it too. It makes good burgers. If any of you have an Adventist Book Center near you, they carry many good vegetarian products. I live in Canada, so we have different products, though I will look to see if I can find some of the Morningstar products mentioned (maybe at the health food store). For burgers, I enjoy Money's - they have lovely, mushroom-flavored patties. They used to have the best sausage patties, but I can't find it now. Burger King restaurant serves a surprisingly good patty. I get a lot of products from a Buddhist company called Happy Veggie World, here in BC. My favorites are the chicken-breast and prawn analogues. They also have an excellent ham - sweet and smoky. Yves has a line of burgers, veggie ground, neat balls, sandwich slices, and entrees. I use the ground for shepherd's pie and spaghetti sauce. The neat balls are great in all kinds of sauces. They have an excellent pepperoni that are now used on veggie pepperoni pizza from Panago pizza. Amy's does make some great meals, though it's pretty expensive up here. And I like Tofurkey, though they have changed the formula, and I don't like it as much as I did before. I forget who makes them but there is an Indian one, Kung pao chicken made3 with tofu and a peanut satay or something made with VEAT. They are really good, also a little pricey but pretty cheap if on sale.
