Cucumber Sandwiches

 

Ingredients 

2 med. cucumbers, peeled & finely chopped

8 oz. cream cheese

1/2 tsp. Tabasco sauce

1/2 tsp. garlic powder

1/4 tsp. salt

1/4 cup Miracle Whip

1/4 cup green onion, finely chopped bread slices

 

Preparation

Peel cucumbers, chop into very fine pieces.  Blend cream cheese &

and    remaining ingredients. Add cucumber & mix well.  Trim

crust from bread slices & cut into 3 pieces.

 

Spread bread sections with cucumber mixture to make small sandwiches.

We love cukes for texture in  our Veggie Dagwood Sandwiches.  We use a

multi-grain bagel, toast it slightly.  Then add spicy brown mustard, sea salt,

fresh cracked pepper, basil leaves, a few oregano leaves, red onion slices,

tomato,portabella mushroom slices, sprouts, bell peppers and of course

cucumbers! I like to add a drizzle of olive oil and balsamic vinegar- yum!  My

son wanted me to mention that he sprinkles garlic powder on his and loves it.

(He sprinkles garlic powder on everything!)

 

If you like spicy hot foods here is a favorite cucumber recipe of ours: 

Jamaican Spicy Cucumbers: 

2 large cucumbers, peeled

1 tsp salt

1 minced hot pepper (Jalepenos are my preference)

1 tsb lime juice

½ cup Anntony¢s Jerk Sauce (Available at www.Anntonys.com)

Method

Cut cucumbers in half lengthwise and seed by scraping a small spoon down the

center.. Slice crosswise. In bowl, salt cucumber slices, mix with other

ingredients and let stand for ½ hour. Drain off liquid and serve.

 

You can eat these alone or use them as a pickle substitute on bean burgers.
