Spinach with Spicy Peanut Sauce

 

1/4 cup vegetable broth

3 tablespoons of creamy or crunchy peanut butter

1 teaspoon of brown sugar

1 teaspoon olive oil

1/2 teaspoon salt

1/4 to 1/2 teaspoon crushed red pepper

1 10 ounce package of prewashed spinach

 

Combine first 6 ingredients in a dutch oven and cook over medium heat; stirring constantly until smooth. Stir in spinach and cook 45 minutes or until spinach lightly wilts, stirring constantly.

Serve immediately.

Yield: 4 servings. 103 calories per serving

I clipped this from some magazine recently, it's very good with lots of spicy flavor. Hope you like it.

Do you mean 45 seconds, or perhaps 4 -5 minutes? I think 45 minutes

would give you spinach mush? But it looks good!
