"Lemon Cheesecake Tart" Crust ~~~ 1/2 cup slivered almonds (I crush them up a bit) 2 Tblspns. canola oil 4 Tblspns. maple syrup 1 cup wheat pastry flour 1/4 tsp. salt Filling ~~~~ 14 oz. coconut milk 1 1/2 cups water 1 cup raw sugar (I use turbinado) 4 Tblspns. agar agar flakes 1/8 tsp. turmeric (this is for color only) 3/4 cup lemon juice 1 1/2 tsp. lemon zest 2 tsp. vanilla 1/4 cup arrowroot Preheat oven to 350 degrees. Lightly grease tart pan or pie plate. Mix all the crust ingredients together, add a bit more oil if needed, and press dough into tart pan, press the dough up into the fluted edges if using a tart pan. Prick the bottom of the crust a few times with a fork and bake 20 mins. to brown and cool before filling. Dissolve arrowroot in 1/2 cup water and set aside. Mix coconut milk, 1 cup water, sugar, agar and tumeric in a saucepan. bring to a low boil and set on a low simmer until agar is dissolved, usually takes 6-8 mins. Watch and don't over cook as the agar will lose it's strength if over cooked. Stir in lemon juice, zest and vanilla, then bring to a boil. Add arrowroot mixture, stir and boil one minute. (very important to stir so the agar doesn't clump as this is the thickening point.) Pour into crust and let firm up. Place in the fridge to chill. .. It's been a long time since i've eaten it..but it had cherry pie filling on the top..
