I needed something for potluck at church as potlucks are notoriously gross anyway : ). this is really good and what little was leftover I will make a stuffed green pepper today... Pico Gallo 6 servings 2-3 tbsp canola oil (I used peanut) 1 med. onion, finely chopped 2 cloves garlic, minced 3 c. cooked white rice (I used brown) 1 tsp ground cumin 1 tsp ground coriander 1/2 tsp ground ginger 2-3 tbsp veg Worcestershire sauce salt/pepper 1. heat oil in large skillet over med heat and add onion. when starts to turn color, add garlic and saute 5 min. or till onion is golden. 2. stir in rice, beans, and seasonings and mix well. cook till heated through. season with salt/pepper. Translates to "Beak of the Rooster" or near to it. Yours would be good as an enchilada stuffer also, wouldn't it? I need to explore some vegan cheeses as I really like a tbsp cheese or so for my tacos or enchiladas or come up with a yummy sauce to put over so cheese isn't even needed. I have determined regular cheese is no longer in my future. hubby ordered pizza last night and cheese pizza was the lesser of the 2 evils but it made me very sick--vomiting, hard time breathing, and lots of joint pains. who would have thought in a week and a half one could get that ill? does anyone have any good ideas of brands of decent vegan cheese so that when I am able to go exploring I know what to look for? take care : )..........
