Guest guest Posted September 25, 2005 Report Share Posted September 25, 2005 "Greek Basmati Rice" 2 cups water1 cup basmati rice1/4 tsp. salt2 cups fresh spinach shredded1 tsp. snipped fresh dill (I used a dash of dried as I didn't have fresh)1 large tomato seeded and chopped (3/4 cup)1 tsp. lemon zest2 Tblsp. lemon juice1/2 cup crumbled feta cheese (2 oz.) In medium saucepan bring water to boil and stir in rice and salt. Return to boil, reduce heat, cover and simmer for 15 mins.Stir in spinach and dill into cooked rice, cover and let stand 5 minutes. Stir in chopped tomato, lemon zest and lemon juice.
