I lost my recipe for years and finally found it yesterday stuck in an old cookbook. This is delicious and you can add to the pie to your liking. Red pepper flakes, chives, sauteed mushrooms. I make it just as it is posted. Enjoy! Donna Haitian Onion Pie ( Haitian tarte a l'oignon) 6 onions chopped 1/2 tsp. salt 1/2 tsp. sugar 1/2 tsp. black pepper 4 tablesppons butter or margarine 4 tablespoons flour 1/3 cup milk grated parmesan cheese pie crust (unbaked) Preheat oven to 350 degrees and place a pie crust in 8 or 9 inch pie plate (pierce bottom of crust with fork 2 times). (I use my glass quiche plate) Melt butter and saute onions until tender but still slightly firm. Slowly add salt, pepper, sugar and flour, stir to mix well. Add the milk slowly and mix. Stir in parmesan (I use 1/4 cup). Place mixture into pie crust lined plate and bake 30 to 40 minutes. Cool 15 minutes, slice and serve. Guest guest Posted September 26, 2005 Report Share Posted September 26, 2005 ---Donna, this looks really really good : ). it would be good as part of a brunch. my kids are very big on brunch on Sundays where we have a variety of cereals, muffins, juices, fruits, etc to choose from at leisure : ). hmmmmmm........thanks for the recipe : ). my youngest is home today finishing her last round of prednisone-- fall and harvest have taken a bad toll on her lungs but she requested black beans and rice for lunch : ). she is going to learn how to make them today and she will be learning how to make homemade kolaches for Heritage Day at school tomorrow. I will post the kolache recipe later today--they are fantastic : ). hubby had first veggie pizza and gave it a 2-thumbs up. It was the Spicy Black Bean, Corn, and Cilantro pizza in current issue of Veggie Life--I will also post it if anyone is interested. take care : )..............
