As with both, the slim, small roots are the sweetest. I have most enjoyed parsnips curried in a good authentic recipe. I've found them fine cooked in lots of butter, but that's certainly not slimming. I usually put one in a stew or pea soup but mash it up fine so the flavor is more subtle. We eat turnips, rutabagas, carrots, potatoes and sweet potatoes. I'm making my grocery list and wondering if I want to add them to try. Mashed turnips or rutabagas are great by the way. I prefer them to carrots myself because, as was said, if you get the young ones they are soooooo sweet but with such a nice tang. I put them in curries too, although for the non-slimmers, they are wonderful glazed with maple syrup and butter/margarine. I also have two casserole dishes that are great with parsnips. If you like them, they go nicely mashed with soymilk on top of faux shepherd's pie - although that might be an acquired taste ;=) *By all means* do add them to your list! Mash without any fat, transfer to a bowl and brown nicely under the grill. Perhaps pop some sliced tomatoes or chopped onions and black pepper on top. Maybe because the texture is so different and for me texture and taste seem to go hand in hand. Anyway, I grew up eating them as being roasted. They are really good that way. But I've also boiled them with my potatoes and mashed them up for a different spin on mashed potatoes. You can also add them to any kind of stew/soup you make.
