It is called " Hobo dinner " It was originally made for simple campfire dinners, but I love it so that I make it for me and hubby about once a week. *** I just take a veggie burger pattie coat with olive oil and some seasoning I use Laury's seasoned salt. I put that on a large piece of aluminum foil. Then I chop one or two carrots, one potato, and half of an onion. I put the veggies on top the pattie and drizzle with more olive oil so the veggies are coated. Then I sprinkle with some salt and pepper then put into the oven @ 425 for as long as it takes to cook the veggies through( I have never really gotten a precise time). I would make sure to turn the pattie at some point so it doesnt dry out on the bottom. Oh and when I bake it I just put it into a loaf pan or pie plate. It is really good and really versatile. Guest guest Posted October 9, 2005 Report Share Posted October 9, 2005 I love hobo dinners! when we left NYC I had frozen veggies (corn, broccoli, peas, green beans, whatever!) and half a bag of frozen french fries and a bag of frozen crumbles... I had to use them before our move, so I made hobo dinner.. I layered them all in a deep pot , topped with the fries, then the crumbles, added some spices, adn baked. Guest guest Posted October 9, 2005 Report Share Posted October 9, 2005 Hey, Heather, my mom did that every summer on the grill when I was growing up, but she'd add a little water and Lipton's onion soup mix to the packet, instead of the onion... and it was a chunk of some kind of beef back then.
