Meal Idea as simple as they come

This recipe is one that I have grown up with. It is called " Hobo

dinner " It was originally made for simple campfire dinners, but I love

it so that I make it for me and hubby about once a week.

 

*** I just take a veggie burger pattie coat with olive oil and some

seasoning I use Laury's seasoned salt. I put that on a large piece of

aluminum foil. Then I chop one or two carrots, one potato, and half

of an onion. I put the veggies on top the pattie and drizzle with

more olive oil so the veggies are coated. Then I sprinkle with some

salt and pepper then put into the oven @ 425 for as long as it takes

to cook the veggies through( I have never really gotten a precise

time). I would make sure to turn the pattie at some point so it

doesnt dry out on the bottom. Oh and when I bake it I just put it

into a loaf pan or pie plate. It is really good and really

versatile. Heather G

You get a gold star.....This is a great idea and I will try it. I will add

mushrooms too. I'll bet this would work with that BBQ GardenBurger riblet with

sauce thingy! OK time for me to create.

I love hobo dinners!

 

when we left NYC I had frozen veggies (corn, broccoli, peas, green

beans, whatever!) and half a bag of frozen french fries and a bag of

frozen crumbles... I had to use them before our move, so I made hobo

dinner..

I layered them all in a deep pot , topped with the fries, then the

crumbles, added some spices, adn baked.

YUMMMM

 

I mean <> really good, and soo simple I felt apologetic, David

couldn't believe how good it was! =)

 

I never knew anyone else called it hobo dinner! =)

I also love hobo stew, or STONE SOUP!! after the book " Stone Soup " >>

Hey, Heather, my mom did that every summer on the grill when I was

growing up, but she'd add a little water and Lipton's onion soup mix

to the packet, instead of the onion... and it was a chunk of some kind

of beef back then. Sometimes the veggie was peas too.

Amy, That idead about the onion soup mix sounds really good. I will

try that next time I make them. Not to say they aren't good as is,
