Gingerbread Muffins (this is from our files) Hi Julie

Gingerbread Loaves (Julie this recipe makes wonderful muffins, bake them 18-20

mins)

 

3/4 cup packed brown sugar

1/2 cup butter or margarine, softened

2 eggs

1 cup molasses

1/2 cup boiling water

1/2 tsp. baking soda

2 3/4 cups flour

2 tsp. baking powder

4 tsp. ginger

2 tsp. cinnamon

1 tsp. allspice

1 tsp. ground cloves

1/4 tsp. salt

 

Heat oven to 350 degrees and grease two 8X4 loaf pans.

In large bowl combine brown sugar and butter, beat until light and fluffy. Add

eggs and beat well.

In a small bowl combine molasses,boiled water and baking soda, mix well. Beat

into brown sugar mixture.

In a medium bowl combine flour, baking powder, ginger, cinnamon, allspice and

salt. Mix well. Gradually add the dry mixture to wet mixture until well

blended.

Spoon batter into greased pans and bake at 350 degrees for 40-50 minutes. Or

until toothpick inserted comes out clean. Remove from oven. Let sit 15 mins.

Remove from pans and cool on wire rack.

 

 

Glaze

Place 1/2 cup powdered sugar with 1 to 2 tablespoons of lemon juice in bowl

and, mix well, brush over cooled loaves.

I love anything gingerbread! I will definitely have to try this at

some point. One of my fave breakfast recipes ever is for gingerbread

waffles. Oh, heaven on a plate!

I had never heard of that, but in FL I had gingerbread pancakes with

cherries.... it was good!

me too!!

 

this is so good.......... made it last night, forced myself to only have half a

loaf, finished it off for breakfast!
