I bet they go well with BEER too huh Paul, LOL. hugs, Chanda - paul v Sunday, October 09, 2005 10:45 PM Roasted Mexican Potatoes recipe posted Roasted Mexican Potatoes 4 medium sized brown potatoes 1 packet of taco seasoning mix one without MSG. 3 tablespoons cornmeal 1/4 c. olive oil Heat the oven to 450 degrees. Poke potatoes with a fork. Place in microwave. Now microwave on HIGH for 6 to 8 minutes and almost done but still kind of firm. While those are in the microwave, take a plastic bag, combine taco seasoning mix, and cornmeal. Mix well. Cut cooked potatoes lengthwise into quarters. Place in large baking dish. Coat with oil; toss to coat. Now dump the potatoes in a plastic bag with seasoning mixture; shake to coat. Arrange potatoes on a sprayed baking sheet. Guest guest Posted October 11, 2005 Report Share Posted October 11, 2005 I made paul's taters yesterday! YUMMMMM the thing is these are really simple to make, with TONS of potential.. I can picture them for a brunch with a mexically twist... with scrambled tofu, or breakfast burritos.. we had them with enchiladas.. or rather, Chiladas.. and I made guacamole.. topped the taters with that.. I think they'd be great with sour cream, some beans, the works.. . a yummmy twist for a tater, I think! thank you Paul, I shall be making these again! =) jenni and the gang ... we ALL loved them here!
