Flax Oatmeal Raisin Cookies recipe posting

I've been making these for years. Found the recipe on the back of an off brand

flour package.

 

Flax Oatmeal Raisin Cookies

 

1/2 cup canola oil

3/4 cup brown sugar (dark or light)

1/4 cup sugar

2 eggs or 3 egg whites

1/2 cup water

1 3/4 cups unbleached flour

1/4 cup flaxseed flour (flaxseeds ground to a powder in the blender)

1 cup raisins

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

2 cups quick cooking rolled oats

Optional- you can also add chopped nuts, carob chips or chocolate chips to this

batter

 

Preheat oven to 350 degrees.

Combine water and raisins in a sauce pan, bring to a boil, stir and remove from

heat, let cool.

Combine oil, both sugars and eggs, beat well. Add raisins and liquid and mix

well.

In a separate bowl mix all dry indredients together except oats, and add to the

wet mixture, beat well. Stir in the oats.

Drop by rounded teaspoonsful onto greased cookie sheet and bake 9-12 mins.

until light golden brown. Remove to wire rack and cool.
