Other green veggies besides salad??

I have a question: I'm all saladed out! I'm trying to think of some good green

veggies stuff to eat. I could only think of spinach, broccolli, and green

beans. Anyone have any other ideas?

Hi Donna,

My mom liked some of the products I had her try like Boca's veggie lasagna. I

haven't fixed the porties for her yet.

Zucchini, peas, cucumbers, artichokes, herbs, avocados, kiwis,

arugula, green sweet peppers, green cabbage, brussels srpouts, celery,

okra, seaweed... I'm sure there are more!

Kale! I put it on everything...veggie burgers, tempeh

sandwiches, wraps

It's also good braised with some garlic and mushrooms

(also add some broth and potatos to it for one of my

favorite recipes!)

It is a little rough and is somewhat bitter (which I

like in contrast to the mustard, Katchup, pickles or

whatever) but it has a full flavor unlike lettuces. I

also put spinach on them with the Kale.

You mean for cold, or for cooked?

I have never eaten the artichoke other than marinated in oil and vinegar.

I am going to try it cooked and eating it off of the leaf like peeps talk about.

Do you like asparagus? yummy. just heat it in a pan in some margarine, add a

touch of garlic powder salt and black pepper.

I know it's not green, but wax beans (yellow) are a great variation from the

green bean.

For cold have you done broccoli, carrot, peppers, cucumbers, BELGIAN ENDIVE,

dipped in a dip? you can do ranch dressing, and look in the files section, there

are dips in there.

How bout all the greens. I eat them boiled and then I just add a touch of garlic

powder and some black pepper and salt. They are all good, the collard, turnip,

beet, mustard, kale, chard.

Then there are peas. My daughter loves the canned ones, again sautéed in

margarine or sesame oil with some garlic powder.

you can do pea pods, sautéed in a little oil and some broth and garlic, some soy

sauce and sugar, then add a little cornstarch to make the sauce a little thick.

My son likes the canned Italian style green beans sautéed in garlic and oil or

margarine, then I add bread crumbs and fresh grated parm cheese.

Brussels sprouts are great. For a different way to eat them, pull them apart

leaf by leaf. Steam leaves or microwave, top with margarine or whatever and

seasoning of your choice.

Cabbage is great too. In fact, I am going to post a cabbage recipe in a bit ;o)

let me know if you need me to elaborate on anything,

Hugs,

Chanda

A healthier way to do asparagus, too, is to steam it. It cooks up

pretty quickly (3-4 mins max) and it's best if it's al dente. Poke it

with a fork periodically to check if it's softening. Squeeze on a bit

of lemon juice and add salt and pepper. Mmmm...

Also, I'm not sure if everyone knows this, but the way to prepare

asparagus for cooking is to hold a stalk gently with one end in each

hand, near the whitish end of the stalk. Bend the two ends until it

snaps in two. It may seem like a lot that snaps off (an inch to 3 or 4

inches) but the part that is too tough to eat is what snaps off.

right craige,

(I still call you craige pronounced craje, sorry old habits die hard)

you can use those stalks that you snap off in your compost heap. :o)
