Donna Hey, Donna, while we're waiting for Wendywoo to post hers, I have one! Actually from Ireland too - DH & I went there last September! I of course came home with two cookbooks, maybe even three? - no the third was a gardening book! *lol* (I also brought back tea. :-) Anyway, here's one from one of those: Brown Soda Bread 675 g or 1 1/2 lb or 6 cups wholemeal flour (the closest we have here is whole wheat, unless you're lucky enough to find graham flour) 450 g or 1lb or 4 cups strong white flour (hi-protein white) 2 tsp bicarbonate of soda (baking soda) 2 tsp salt approx. 800 ml or 1 1/2 pints or 3 1/2 cups buttermilk Preheat the oven to 230*C or 450*F or Gas 8. Mix all the dry ingredients in a large bowl. Make a well in the centre and slowly add most of the buttermilk until a soft dough is formed. Add more buttermilk if necessary but don't let the mixture become too moist. Turn the dough onto a floured surface and pat it gently into a round, about 5 cm or 2 in. high. Place on a lightly floured baking sheet and mark a deep cross on the surface with a floured knife. Bake for 15 - 20 minutes, then reduce the heat to 200*C or 400*For Gas 6 for another 20 - 25 minutes, until the loaf sounds hollow when tapped. Guest guest Posted October 13, 2005 Report Share Posted October 13, 2005 That's pretty much exactly what I use - half white and half brown but I like to add 'My Own Variation' (so, you know you have an exclusive here folks) of two good tablespoons of pinhead oatmeal. Now ordinary breakfast oats will not do you will have to get the proper pinhead oatmeal probably from a specialist shop like an organic shop. AND . . . I add one teaspoon black molasses. At our favourite restaurant they also serve a freshly baked and deliciously moist soda bread. It just doesn't keep until the next day so you have a good excuse to eat it all up!
