Guest guest Posted October 13, 2005 Report Share Posted October 13, 2005 Pepparkakor Swedish Ginger cookies 3 cups all purpose flour 2 cups whole wheat flour 1 1/2 tsps. baking soda 1 tsp. gr. ginger 1/2 tsp. ground cardamom 1/2 tsp. gr. cloves 1 tsp. gr. cinnamon 1/2 tsp. salt 1 cup butter, room temperature 1 cup sugar 1 large egg 1 cup molasses 2 Tblspns. cider vinegar Combine the two flours, baking soda, spices and salt. Mix well and set aside. In a large bowl, cream the butter and sugar. Beat in the egg. Then beat in the molasses and vinegar. Gradually blend in the dry ingredients. Cover and chill for 4 or more hours. Preheat oven to 375 degrees. Lightly grease cookies sheets. On a floured surface, roll out the dough to a thickness of 1/8 inch. Using cookie cutter, cut into shapes and place 1 inch apart on the prepared cookie sheets. Bake for 5 to 8 mins. or until lightly darkened. Transfer to wire racks to cool.
