For a quiche the fat calories are low too. Spinach Tomato Quiche Pie 1 piecrust 1 10 oz. pkg. of frozen spinach, thawed, drained and squeezed dry 1/4 cup low fat sour cream (make sure there's no gelatin) 2 Tblpsns. minced onions or shallots 1 cup evaporated skim milk 1/4 tsp. salt 1/8 tsp. pepper 2 large egg whites 1 large egg 2 ripe medium tomatoes, thinly sliced 1/3 cup shredded low-fat Jack or cheddar cheese Preheat oven tp 350 degrees. Coat a 9 inch pie pan with cooking spray. Fit piecrust into pan and flute rim and take fork and poke a few holes into bottom of crust. Mix spinach, sour cream and onions in mixing bowl. In a separate bowl, whisk together milk, salt, pepper, egg whites and egg. Stir 1/3 cup of milk mixture into spinach mixture. Spoon spinach mixture into bottom of prepared crust in pan. Add layer of tomatoes and top with cheese. Pour remaining milk mixture over cheese. Place pie pan on a baking sheet and bake for 45 minutes or until set. Let stand 10 mins. before serving.
